Cottage Spinach Cheese Muffins

My mom has her version on how she makes Spanakopita using cottage cheese instead of Feta, well, I did a test on this making this pie into muffins, both the 6 count muffin pan or 12 count muffin pan. The recipe is great, because you can use any brand of biscuits or use pastry dough which can be found in the cooler section of your local grocery store.
This makes approximately 10 muffins.
1 cup of spinach fresh or frozen
2 tbs of butter
2 eggs
1/2 carton of cottage cheese
1/4 tsp of salt

Preheat oven according to directions of biscuits container. In saucepan, melt 2 tbl of butter, add spinach and salt for 5 minutes, turn off heat. Add two eggs and cottage cheese to spinach and stir completely. Use cooking spray on muffin pan. Open container of biscuits, roll out each biscuit until it is like making sugar cookies. Take each one and lay over each muffin hole. Take spinach mixture and put enough mixture in each one. With the excess dough that is hanging on each side, fold over to cover and than back for 20 minutes.
