Brie in soup?? Oh, yes! ... and it's delicious. This creamy chicken noodle soup with brie, spinach, & artichokes is chock full of good stuff and oh-so-creamy-and-satisfying.

3 T. butter
1 c. chopped carrots (about 2 carrots)
1 c. chopped celery (about 2 stalks)
1 large onion, chopped
2 garlic cloves, minced
2 (14.5 oz.) cans chicken broth
1/2 tsp. ground white or black pepper
1/2 tsp. salt
2 c. whole milk
1/4 c. all purpose flour
1 c. small pasta (I used mini farfalle - a.k.a. mini 'bowties')
2 c. cooked chopped chicken (I used the white meat from a store-bought rotisserie chicken)
Additional 1 c. whole milk
1 (10 oz.) package frozen chopped spinach, thawed and well-drained
1 (9 oz.) package frozen artichoke hearts
4 1/2 oz. Brie or Camembert cheese, some or all of the rind removed, and cut into chunks
