Creamy Cucumber Soup

A refreshing treat that makes a great snack or side dish.

1 1/2 pounds of cucumbers - either seedless or with the seeds removed chopped into small pieces
1 teaspoon each of lemon and lime juice
1/4 cup of diced onion
1 cup vegetable broth
1 teaspoon each of salt, lemon pepper, rosemary and parsley
1/2 cup whole milk
1/2 cup cream
Place all of the ingredients into a food processor and blend together until all solid pieces are very small. Next, place the cucumber soup into a covered bowl and place into the refrigerator for 3 to 4 hours to allow the flavors to mix. Before serving take a spoon and stir the cucumber soup for about ten seconds.
