Creamy Shrimp and Rice

This Creamy Shrimp and Rice couldn’t be any easier to make. It was ready in under 20 minutes — impressive! Of course, when I made it, I had to change things up a little bit. First, I added shallots. I love the mild onion flavor and I always have some on hand. Then, I added garlic. It’s just the way I roll. Garlic makes everything better, in my book.

1 Tbsp butter
3 cloves garlic, minced
2 stalks of celery, finely diced
1/4 cup green bell pepper, finely diced
1/4 cup shallots, finely diced (can substitute chopped green onions)
1 pound shrimp, clean and deveined
1 10.75 ounce can Cream of Shrimp soup
1/2 cup hot water
1/4 tsp ground red pepper
