Crock Pot Baked Potato Soup

If you love loaded baked potatoes, then this is a must try. It's rich and creamy and reheats really well for the next day's lunch!

8 -10 red potatoes, cut into 1/2 inch cubes
1 cup frozen diced onion
4 cups reduced sodium chicken broth
3 cloves of garlic, minced
1/4 cup butter, cut into cubes
2 teaspoons salt
1 teaspoon pepper
1 cup half & half
1 cup cheddar cheese, plus more for topping
8 slices of bacon, cooked and crumbled
sour cream, optional
