Crock-Pot Chicken & Dumplings

1 1/2 lbs. chicken breast, boneless & skinless
2 cans cream of chicken soup
2 cups chicken broth, low-sodium
1 onion, chopped
2 tablespoons butter
water
1 can refrigerated biscuits
Place chicken in crock-pot. Add onion, cream of chicken soup, chicken broth, and enough water to cover chicken (add more if you would like to have a thinner sauce). Cook on low for 4-6 hours. About 1 hour before you are ready to serve: cut or tear biscuits into pieces. Add to crockpot and cook for about 1 hour or until dumplings are cooked through. Season with salt & pepper as desired.
