This salad makes the perfect refreshing summer lunch or dinner! It has quickly become one of my newest addictions.

1 medium cucumber, sliced
1 small tomato, cubed
1 slice red onion, diced
1 tsp light mayo or greek yogurt
handful of sliced almonds
ground pepper, pinch

Add cucumbers, tomatoes and red onion to a mixing bowl. Mix with ground pepper and light mayo or greek yogurt. Top with sliced almonds.
