Cucumber Salad with Red Wine Vinegar

Cucumber Salad works perfectly for a quick side. I love pairing it with proteins off the grill like my Raspberry Chipotle Grilled Chicken. I have this great spiralizer that I use to slice up the cucumber. The most important thing with this salad is to do the cucumbers right before you are planning to serve otherwise the water from the cucumbers may water down the red wine vinegar.

2 spiralized cucumbers (you can chop them very thinly as well)
1 small red onion
2 T red wine vinegar
1t sugar
salt to taste

Whisk together the red wine vinegar and sugar and then add as much salt as you prefer.
Slice the red onion and the cucumbers, then toss in the red wine vinegar mixture.
Serve immediately.
