Cucumber, Tomato and Onion Salad

Anything from Paula Deen is always good and this salad was no exception. It's a great dish to bring to a BBQ without having to worry about it spoiling.

2 large cucumbers peeled, sliced very thin
1 pint cherry tomatoes halved
1/2 sweet onion sliced thin
2 tablespoons parsley
1 tablespoon apple cider vinegar
1 tablespoon olive oil
salt & pepper to taste
In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.
