This is a staple in our house. It is light and creamy and GREAT during summer months.

3 cucumbers
1 cup mayo
1/4 cup sugar
1/4 cup apple cider vinegar
1/4 tsp salt
1 cup mayo
1/4 cup sugar
1/4 cup apple cider vinegar
1/4 tsp salt
In a large bowl, combine mayo, sugar, vinegar and salt. Mix until disolved.
Add the peeled and sliced cucumbers into bowl and fold until mixture covers the cucumbers. Chill in refrigerator for at least 1 hour. As the cucumbers sit they will make more liquid.
Best if made the day of the event.
