Dreamy Cheesecake

My favorite dessert is cheesecake, and this simple recipe for a basic cheesecake comes together quickly and bakes up beautifully with a velvety smooth texture. To add color and flavor, I add my favorite jams, jellies, preserves and/or fresh fruits either by swirling them in to the batter before baking or drizzling them over the baked and chilled cheesecake.

Crust:
2 cups graham cracker crumbs
4 Tablespoons butter, softened
1/4 cup granulated sugar

Batter:
4 packages (8-oz. each) cream cheese, softened
1 cup granulated sugar
2 teaspoons vanilla extract
4 eggs, room temperature
1 cup sour cream
Preheat oven to 325°F. Mix Crust ingredients until well combined and press evenly onto bottom and about 1 inch up the sides of a 9-inch springform pan. Bake 10 minutes. While crust is baking: Beat cream cheese, sugar and vanilla in a large bowl until well blended and creamy. Add eggs, one at a time, mixing after each addition just until blended. Add sour cream and mix well. Pour over crust. Bake 40 min or until center is almost set. Be careful to not over-bake. Cool completely at room temperature before chilling in the refrigerator at least 4 hours before serving.
