Easy 30 minute dinner - Stuffed Sweet Potatoes!

Spicy ground turkey mixed with sautéed peppers and sweet marinara sauce all stuffed in a delicious yam potato. This super easy dinner recipe is healthy and can be made in less than 30 minutes!

2 yam potatoes
1 lb Ground Turkey
1 ½ tablespoon Garlic Powder
½ tbsp. to 1 tbsp Hot Sauce (based off desired spicyness)
Salt & Pepper to desired taste
¼ packet Taco Seasoning
½ Red pepper , cut, cubed
1 teaspoon Red Pepper flakes
½ Onion, cut, diced
1 tbsp Italian Seasoning
1/2 jar marinara sauce
Greek Yogurt
diced scallions for topping

1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
1/2 t apple cider vinegar
