Egg and Drumstick Curry

This is one of spicy and gravy with drumsticks and Egg. We can have with rice and rotis also. Its a andhra favourite recipe.

6 boiled eggs, make small slits lengthwise along the egg,
1 drumstick, cut into 2 inch pieces,
2 onions, finely chopped,
2 tsp red chilli pwd (adjust),
salt to taste,
coriander leaves for garnish,
21/2 tbsp oil,
Green chillies - 4,
A pinch of Turmeric powder,
Curry leaves,
Garam masala powder - 1 tbsp,
A pinch of sugar (optional)
Finely chop the Onions and Green chili's. Add oil to a cooking pan, once heated,slowly add the hard boiled eggs and roast till it turns light golden colour on medium heat with little bit salt and turmeric powder.After they get roasted take aside on a plate.(careful while frying). In the same pan,oil add the slitted green chili's,chopped onion and saute them until they turn light brown in colour.Add ginger garlic paste and turmeric.Add the drumsticks, red chillie powder and mix it for a while and add water(approx imately 11/2 cup of water)and finally add eggs and put lid.Let it cook for 10min-13min in medium heat.Check for consistency and finally add garam masala powder and chopped coriander leaves and switch off the stove.(I like the consistency to be thick gravy.)Yummy yummy Egg Drumstick curry is ready to dish out with plain rice and rotis as your wish.
