Fancy Dessert: Lemon Goat Cheese Cake

An unusua dessertl, with a crunchy base of pastry and a tasty filling made with goat cheese and lemon. As a final touch, the tart is caramelized to a nice brûlé finish. Serve cold, garnished with a dollop of crème fraîche.

for the dough base:
300 g shortbread
flour for rolling out pastry

for the filling:
10 eggs
300 g of sugar
450 ml of cream thick
zest and juice of 5 lemons
50g goat cheese seasoned average
for finishing brûlé:
4 tablespoons powdered sugar
Mould 22 cm diameter
baking tray
baking paper
dried beans
