Fettucini with Ground Turkey and Vegetables. A light dish that is perfect for lunch or dinner, and is a great way to eat healthier and cleaner.

4 ounces Fettucini
8 ounces lean ground turkey (I use 93/7)
1/2 cup each red, yellow and green bell pepper, diced
1/2 cup red onion, diced
2 garlic cloves, minced
12 grape or cherry tomatoes, halved
4 ounces baby portobello mushrooms, quartered
Salt & pepper
2 teaspoons olive oil
1/4 cup vegetable broth
2 Tablespoons sweet chili sauce
2 baby bok choy
Fresh parsley, for garnish
