Firecracker Coleslaw is perfect for the 4th of July, not only because of the name, but because of the little kick of spice in the dressing. It's a tangy, crisp slaw, that's ideal for hot weather.

Firecracker Coleslaw

1 bag coleslaw mix
2 carrots, peeled and cut into matchstick-sized pieces
1 red bell pepper, cut into matchstick-sized pieces
1 small red onion, cut into thin slivers

Dressing

1/2 cup apple cider vinegar
1/3 cup granulated sugar
2 tablespoons liquid from pickled jalapeno slices
1 teaspoon kosher salt
1/4 teaspoon fresh cracker pepper
1 teaspoon mustard seed
1/2 teaspoon celery seed
2 tablespoons olive oil
