Flavorful Chicken Pesto Pasta

This is a simple, healthy meal that is easy to throw together. Really you can add whichever vegetables your family will tolerate. I used my Lemon Oregano Chicken in this recipe, but feel free to use any kind of chicken you… baked, grilled or sauteed! Rebecca has a great pesto recipe if you want to try making it fresh.

1 1/2 lb cooked chicken breast (3 large chicken breasts), cut into bite-sized pieces
1 medium package of baby carrots
1 head of broccoli cup into bite-size pieces
1 large red bell pepper, sliced
1 small yellow onion. sliced
1/4 c pesto (fresh or store bought)
1 lb of the pasta of your choice (we used whole wheat rotini)
2 cloves of garlic, minced
salt and pepper to taste
2T olive oil
freshly grated parmesan cheese for garnish
1 medium package of baby carrots
1 head of broccoli cup into bite-size pieces
1 large red bell pepper, sliced
1 small yellow onion. sliced
1/4 c pesto (fresh or store bought)
1 lb of the pasta of your choice (we used whole wheat rotini)
2 cloves of garlic, minced
salt and pepper to taste
2T olive oil
freshly grated parmesan cheese for garnish
Get the carrots going in a large skillet with 1 T of olive oil and about 1/4 cup of water and cook for about 15 minutes with the lid on. Add more water if needed.
