Fluffy Baking Powder Biscuits

Great biscuits and they really fluff up! I used a muffin pan this time and it still turned out great!

2 cups unbleached all purpose flour
2 tsp baking powder
1/2 tsp salt
1/3 butter or margarine, room temperature, plus 1 tbsp if needed
3/4 cup buttermilk

1. In a large bowl, with a pastry blender, mix flour, baking powder, salt, and margarine or butter until dough resembles a crumbly mixture.
2. Slowly add the buttermilk until the dough is formed. Turn out onto a floured surface and knead for 50 seconds, or until it holds together.
3. Preheat oven to 400 degree Fahrenheit. Lightly butter a baking sheet.
4. Pinch off twelve small balls from the big dough. Roll each into a 1-inch golf ball size. Place 2 inches apart on greased pan and press down with the bottom rim of a glass to flatten.
5. Bake for 10 minutes or until golden brown. Cool on wire rack.
