Fresh Apple Cake

The way the apples are prepared for this cake is unique to most and is the reason the cake is so light, moist and delicious!

1 ½ Cups of Salad Oil
2 Cups Sugar
3 Eggs
3 Cups All-Purpose Flour

1 teaspoon each of Baking Soda and Salt
3 Cups of Apples, grated
2 teaspoons vanilla
1 Cup Chopped Pecans (optional – I do not add)

Icing/glaze:

½ Cup Butter
1 Cup Brown Sugar
¼ Cup Milk
1 teaspoon Vanilla
