1 pound ground turkey
1 cup chicken broth or stock, divided
1 red bell pepper, diced
1 medium onion, diced
4 garlic cloves, minced or pressed
1 whole carrot, peeled & finely diced
3 cups basmati rice, cooked
2 tablespoons Homemade Cajun Seasoning

2 tablespoons Homemade Cajun Seasoning
Cook ground turkey in a large pot until no longer pink. Brown slightly.
Add 1/2 cup chicken broth, red pepper, onion, garlic and carrot. Stir well and cook until vegetables are tender, about 5 minutes.
Add basmati rice and 1/2 cup chicken broth. Stir well. Add 1 tablespoon of Homemade Cajun Seasoning. Stir well. Add up to 1 additional tablespoon of Homemade Cajun Seasoning to taste.
