Fresh & Homemade Dirty Rice

Delicious, easy recipe with fresh ingredients in one pot – no boxed mix here! Follow the link to my recipe for Homemade Cajun Seasoning: Small Scale. It makes the perfect amount for this dirty rice dish.

1 pound ground turkey
1 cup chicken broth or stock, divided
1 red bell pepper, diced
1 medium onion, diced
4 garlic cloves, minced or pressed
1 whole carrot, peeled & finely diced
3 cups basmati rice, cooked
2 tablespoons Homemade Cajun Seasoning
Cook ground turkey in a large pot until no longer pink. Brown slightly. Add 1/2 cup chicken broth, red pepper, onion, garlic and carrot. Stir well and cook until vegetables are tender, about 5 minutes. Add basmati rice and 1/2 cup chicken broth. Stir well. Add 1 tablespoon of Homemade Cajun Seasoning. Stir well. Add up to 1 additional tablespoon of Homemade Cajun Seasoning to taste.

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
