Fried Brownie Balls

Coconut and Cornflake infused brownie balls.

brownies:
1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

frosting:
4 tablespoons butter melted
3 tablespoons unsweetened cocoa powder
2 tablespoons honey
1 teaspoon vanilla extract
1/2-3/4 cup powdered sugar

fry batter:
1 egg, whisked
2 cups crushed corn flakes cereal
1/2 cup sweetened coconut
Preheat oven to 350. Grease and flour an 8 inch square pan. In a large saucepan, melt 1/2 cup butter, remove from heat and stir in sugar, eggs, and 1 teaspoon vanilla. Using a wooden spoon or a whisk beat well. Add 1/3 cup cocoa, 1/2 cup flour, salt and baking powder. Spread batter into prepared pan. Bake for 25-30 minutes. Do not overcook. Let cool on countertop or overnight in refrigerator. Cut the brownies into sections and crumble all into a bowl. Roll into 1 inch balls. Beat 1 egg in small bowl. In separate bowl combine crushed cornflakes and coconut. Dip rolled brownie balls into egg mixture then into cereal and coconut. Preheat deep fryer to 375. Fry for 1-2 minutes. Drain on paper towel lined plate. Set aside. To make frosting: Combine 4 tablespoons melted butter, 3 tablespoons cocoa, 2 tablespoons honeys, 1 teaspoon vanilla and 1/2 cup confectioners sugar. Warm up in a microwave for a few seconds and drizzle over the deep fried balls. Place in refrigerator.
