Fried Egg, Bacon, & Cheese Sandwich

I got this sandwich from my dad, who loves a really good Fried Egg Sandwich =)

2 Eggs
2 tablespoons Light Mayo
2 slices of Bacon
1 slice of American Cheese
2 slices of Honey Wheat Bread
2 tablespoons Light Mayo
2 slices of Bacon
1 slice of American Cheese
2 slices of Honey Wheat Bread
1. Spray your skillet with non stick cooking spray (I use Olive Oil Spray) and crack your first egg into the skillet over medium heat. Break the yolk in the center with your spatula and salt and pepper your egg. Once your egg is finished cooking, flip it to the other side (only salt and pepper the one side otherwise it will become too much).
2. Meanwhile, spread the Mayo on both pieces of bread and once your egg is finished cooking, place it carefully onto a piece of your bread and immediately top with a slice of cheese so that your cheese can go ahead and start to melt a little.
3. Then, crack your 2nd egg into the skillet and repeat step 1 and then place it on top of your cheese.
4. While your skillet is still warm, I tear the 2 pieces of bacon in half and then place in the skillet. I get the precooked bacon that only takes a few seconds.. it tastes the same to me and is ready in much less time.. not to mention, with less grease popping. Once your bacon is finished cooking, place it on top of your 2nd egg and then top it with your 2nd piece of bread and enjoy =)
