One of my favorite recipes is our Sugar Cookie Bars - I am confident that I could polish off a pan of these by myself. With it being pumpkin season, I have been dreaming about a pumpkin bar that has the denseness and texture of a sugar cookie bar. 1 cup unsalted butter, at room temperature
1 cup brown sugar
1 cup white sugar
4 large eggs
2 teaspoons vanilla
1 cup pumpkin puree (not pumpkin pie filling)
5-6 cups flour
1 teaspoon salt
½ teaspoon baking soda
3 teaspoons pumpkin pie spice
1 teaspoon cinnamon
Frosting:
1 (8 oz) package cream cheese, softened
½ cup butter, softened
1 teaspoon vanilla
2 tablespoons milk
3-4 cups powdered sugar
