(GF) Cheddar Potato Soup

Serve this amazing soup with a great muffin, slice of bread or grilled cheese, and you have the ultimate fall meal! It comes together really quickly and is very tasty! I'm not the biggest potato soup fan, but I thoroughly enjoy this one. My dad is a huge potato soup fan, and he also thoroughly enjoys it!! I hope you try it out as well!

6 cups potatoes, peeled and cut into 1/2-inch cubes
Water
1 & 1/2 tblsp. butter
1/2 small onion, chopped
1 & 1/2 tblsp. cornstarch
1/8 tsp. black pepper
1/2 tsp. garlic powder
1 & 1/2 cups chicken broth
2 & 1/2 cups milk
1/2 cup bacon, chopped and fried crisp
1 & 1/2 to 2 cups cubed, Velveeta Cheese, depending on how cheesy you like it.
