This is the perfect breakfast or brunch for a special morning, celebration, or just because. Light, fluffy, and wonderful!

2 eggs
2 tbsp. coconut oil, melted & cooled
1 tbsp. honey or pure maple syrup
1 c. gluten free oat flour
1 1/3 c. almond milk
