Gooey Oatmeal-Peanut Butter Trail Bars

These oatmeal-peanut butter trail bars are amazing. I usually make about 2 batches every week and even that isn't enough to keep them around very long. Almost all of the ingredients in these are things you will probably have in your pantry already, and you can use whatever nuts and dried fruit you have available. I usually like to wrap each bar individually in cling wrap and then freeze them all in a large freezer bag.

*1/2 cup whole wheat flour

*1 teaspoon cinnamon

*1/2 teaspoon baking soda

1/8 teaspoon salt

*1/2 cup peanut butter

*1/2 cup firmly packed brown sugar

*1/3 cup honey

*1 large egg

*2 large egg white

*2 tablespoons canola oil

*2 teaspoons vanilla extract

*2 cups rolled oats

*1/2 cup chopped nuts or seeds (I used pumpkin seeds)

*1/2 cup bittersweet or semisweet chocolate chips

*1 cup dried fruit (I don’t like dried fruit in my granola bars so I substituted with another full cup of pumpkins seeds)
