A delicious Potato Salad perfect for Summer Time BBQ's and Picnics!

3 lbs potatoes
3 hard-boiled eggs, chopped
1/4 red onions, chopped
1 1/2 c cheddar cheese, cubed
3/4 c sweet pickles, chopped
1 1/2 c mayo
1 T mustard
splash of sweet pickle juice
salt and pepper to taste
