Salad:
2 cups couscous ( cooked )
1 zucchini
1 yellow squash
1 lb asparagus
1 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 cup crumbled goat cheese
Vinaigrette:
3 tbsp red wine vinegar
2 tbsp chopped shallots
1 tsp dried thyme
1 1/2 tsp Dijon mustard
1 tsp honey
1/2 tsp pepper
1/4 tsp salt
2 cloves garlic
1/4 cup olive oil
