To say that these Grasshopper Mint Cookies were a hit at my house would be an understatement! My kids loved them and took any opportunity they could to sneak them (and then tell me about it as soon as they were devoured!) These cookies are chewy, utterly delicious, and start with a cake mix so they're easy to make!

1 box chocolate cake mix (just the boxed mix, not the ingredients to make the cake)
1/2 cup oil
2 eggs

Frosting:
1/2 cup butter, softened
2 tablespoons milk
2 cups powdered sugar
1 1/2 teaspoons mint extract
Green food coloring, optional

Chocolate Topping:
1 cup semi-sweet chocolate chips
1/3 cup butter
