The best Greek Salad. It might not be a common combination but it's a tasty and fresh dish perfect for a nice summer lunch!

1 16oz can chickpeas, drained
2 tablespoons parsley, chopped
1 garlic clove
1 1/2 tablespoons flour
1 teaspoon baking soda
1/2 teaspoon ground cumin
1/4 teaspoon salt
Black pepper
1 tablespoon olive oil

Juice of 1/2 lemon
1/4 cup olive oil
Salt & pepper to taste
1 cucumber, roughly chopped
4 medium sized tomatoes, cut into wedges
1 red onion, cut into strips
1 yellow pepper
1/4 cup Kalamata olives
3.5oz Feta cheese
