Greek Yogurt Zucchini Bread

Greek yogurt is used to lower fat and add moistness to the bread. Try different variations by adding 1 cup of chocolate chips (pictured), cinnamon chips or chopped walnuts. Makes 2, 8.5"x4.5" loaves of bread (12 slices each).

3 cups shredded zucchini
1/3 cup vegetable oil
3 eggs
3/4 cup greek yogurt
2 tsp vanilla extract
2 1/2 cups whole wheat flour
2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground cloves (optional)
1 cup chopped nuts, chocolate chips or cinnamon chips (optional)
Preheat oven to 350?F. Grease 2, 8.5"x4.5" bread pans with cooking spray. Ina large bowl mix sugar, oil, vanilla and eggs. Stir in yogurt and zucchini. In a separate bowl mix flour, salt, baking soda, baking powder, cinnamon, cloves and nuts or chocolate chips. Add dry ingredients to wet ingredients and stir until moistened. Divide batter evenly between bread pans. Bake 40-45 minutes or until a toothpick inserted in the center comes out clean.
