A southwest spin on a traditional dish. Celebrating green chile season with breakfast for breakfast, brunch, lunch or dinner.

2 English muffins split and lightly toasted
4 fresh roasted green chiles peeled, seeded and sliced in half lengthwise
4 slices of canadian bacon lightly grilled
4 eggs poached or fried to your liking
3/4 cup of green enchilada sauce
1/4 cup of grated cheese for garnish
Salt and Pepper to taste
