Green Chile Mashed Potatoes

A southwest twist on a classic dish. A quick and easy way to expand the flavors you normally eat.

1/2 an onion diced
1 tablespoon butter
1 tablespoon olive oil
4 fresh green chiles chopped
2 or 3 slices of bacon cooked and crumbled
3 small idaho potatoes peeled and cubed
Salt to taste
Steam the potatoes in a steamer until tender. Remove to a bowl. Mash to desired consistency and add, onions, chiles, bacon and salt. Stir to combine.
