Grilled Asian Chicken Salad

Asian Chicken Salad loaded with tons of yummy ingredients like mandarin oranges, cucumbers and an awesome marinated and grilled chicken.

For the marinade and dressing:
1/4 cup soy sauce
2 Tbsp fresh ginger, peeled and finely chopped
1/4 cup olive oil
2 Tbsp hoisin sauce
1 Tbsp sesame oil
1/2-1 tsp sriracha hot sauce, depending on spice level
1/2 tsp salt
1/4 cup red wine vinegar
1/4 cup finely chopped green onions
4-5 boneless, skinless chicken tenders (or 2 breasts, pounded thin)
For the Salad:
1 large bunch of green leafy lettuce, chopped
2 cups finely chopped red cabbage
1/2 of a cucumber, sliced
1 carrot, shredded
1/2 cup sliced almonds
1 bell pepper (any color), chopped
1 can mandarin oranges, drained
cilantro, for garnish
