Grilled Cheese Turkey Roll Ups

Food needs to be fun and different for kids to be/remain interested in eating. This roll up takes the idea of a kid favorite, grilled cheese and adds some healthy bits like whole wheat bread and lean turkey breast and we roll it up to keep it fun. Brown on all sides and it makes a perfect lunch or afterschool snack.

4 slices sandwich bread (100% Whole Wheat is a nice choice)
4 slices American Cheese
4 slices deli sliced turkey (sliced thin)
1 T butter

1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
