A great way to use leftover meatloaf meat!

Left over ground beef from Mouthwatering Meatloaf recipe
8 oz can refried beans
8 oz can white garbanzo beans
8oz can black beans
16 oz package shredded cheese-cheddar
1/2 cup finely chopped onion
4 oz canned mushrooms
1/2 cup frozen chopped spinach
3/4 cup plain non-fat Greek yogurt
1/2 cup sliced jalapeƱos
1/2 cup sliced banana peppers
3/4 cup black bean and corn salsa
1 cup shredded lettuce
Tortilla chips
8 oz can refried beans
8 oz can white garbanzo beans
8oz can black beans
16 oz package shredded cheese-cheddar
1/2 cup finely chopped onion
4 oz canned mushrooms
1/2 cup frozen chopped spinach
3/4 cup plain non-fat Greek yogurt
1/2 cup sliced jalapeƱos
1/2 cup sliced banana peppers
3/4 cup black bean and corn salsa
1 cup shredded lettuce
Tortilla chips
Warm up leftover meatloaf in microwave for 3 minutes. Place in a medium mixing bowl and finely crumble meat. Set aside.
Spread refried beans in bottom of baking dish. Layer with garbanzo beans and onions. Sprinkle a small amount of cheese over top. Layer with mushrooms, spinach and black beans. Top with meatloaf meat and jalapeƱos. Spread Greek yogurt and salsa over top. Place banana peppers evenly over top then sprinkle cheese over top.
Bake in oven at 350 degrees for 15-20 minutes. Sprinkle lettuce over top and serve with tortilla chips.
