Guilt Free Strawberry Shortcakes

I still love a small treat every now and again. This Strawberry Shortcake is about 100 calories and it tastes delicious! I don't feel too bad about eating this, and I don't feel too bad about feeding it to my kids!

1 tablespoon cornstarch
1 cup orange juice
1/4 teaspoon vanilla
5 drops of Spark Naturals Lemon Essential Oil
1 1/2 cups sliced fresh strawberries (about 1 pint)
6 Slices of Angel Food Cake (There are about 12 slices in a whole angel food cake)

Stir cornstarch and orange juice in a small pot. Bring to a boil, stirring constantly 1 minute or until mixture is thickened and bubbly. Remove from heat, and stir in vanilla and Lemon Essential Oils. Cool...
