Hawaiian Luau Stuffed Shells

Stuffed Shells with a twist - made in a slow cooker and Hawaiian Luau flavored with a mango chutney. Amazing!

2 cans red enchilada sauce
1 and 1/2 pounds boneless skinless chicken breasts
1 package Hawaiian Luau slow cooker mix
1 and 1/4 cup ricotta cheese
18 jumbo pasta shells
Mango Sauce
1 large mango, (~1 heaping cup) peeled and chopped
1/2 cup orange juice
2 tablespoons fresh lime juice
1 tablespoon fresh lemon juice
2 tablespoons honey
1 tablespoon white sugar
Salt and pepper, to taste
2 teaspoons cornstarch
1 and 1/2 tablespoon water
Optional: cilantro
