This Louisiana crockpot gumbo with chicken, sausage, shrimp, a roux, and TheHoly Trinity of onions, celery, and bell peppers is a classic Cajun stew! Top each bowl with a scoop of rice for a hearty, flavorful, and satisfying dinner. You don't need to go to New Orleans to enjoy an easy gumbo recipe!

1/4 cup all purpose flour
1/2 lb. andouille, kielbasa, or other smoked sausage ( sliced into rounds )
1 lb. boneless skinless chicken thighs
1 (14.5 oz) can diced tomatoes
1/2 large onion ( chopped )
1/2 green bell pepper ( chopped )
1 celery rib ( chopped )
2 garlic cloves ( chopped )
1 bay leaf
2 teaspoons Cajun seasoning
½ teaspoon dried thyme
2 cups chicken broth
1/2 lb. peeled ( deveined raw shrimp )
2 green onions ( chopped, divided )
Rice ( for serving )
1/4 cup vegetable oil
1/2 t sweet paprika
1/2 t dried oregano
2 T chopped fresh parsley
