Potato chips are the secret ingredient in this simple meal, which is perfect for breakfast, lunch, or a weeknight dinner! The thick-cut potato chips add a really subtle potato flavor, but with more oomph than a plain old sliced potato. The veggies, bacon, and cheese just put this meal over the top!

•9 slices center-cut bacon, chopped
•1 green bell pepper, finely diced
•¾ c. diced sweet onion
•4 oz. thick-cut potato chips, lightly crushed
•12 eggs
•1 c. water
•1 c. shredded cheddar cheese
