Hello Kitty Caramel Cake with White Chocolate Frosting

The cake recipe is one that I’m really proud of. I adapted it from Martha Stewart’s caramel cake using my favourite caramel sauce recipe (from Annie’s Eats). You’ve heard me rave about it before. I used it in this recipe and this recipe and even this recipe. Anyway, here it is. Hope you like it =)

1/2 cup butter
1 1/4 cup sugar
1 1/4 cup caramel sauce
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 eggs
Preheat oven to 190C (375F). Line 8x8in square pan with parchment paper. Beat butter in medium bowl till it starts to get fluffy. Add sugar and continue to beat. Add 1/4 cup caramel sauce. Beat eggs and stir into batter. In a separate bowl mix dry ingredients. Alternate adding dry ingredients and remaining caramel, starting and ending with flour. Bake for 25 minutes. Cake is done when center springs back when touched. Enjoy =)
