Homemade Noodles & Chicken Soup

Plump noodles in a chicken broth with vegetables makes this soup so warm & comforting!

2 large eggs
1 tsp salt
1/4 cup milk
1 1/2 - 2 cups flour

Soup:
2 Tbsp EVOO (Extra Virgin Olive Oil)
1/2 large onion, chopped
1 cup diced carrots
1 cup diced celery
2 cloves garlic, minced
2 cups shredded, cooked chicken (I use rotisserie chicken)
8 cups chicken broth (I use chicken bouillon & water)
1/2 tsp salt
1/4 tsp pepper
1 1/2 tsp thyme
