Homemade sambar powder

Sambar powder is one of the key ingredient in preparing all kinds of sambar.Today I showing the home made style of preparing sambar powder.

3 cup Whole dry red chili
11/2 cup Coriander seeds
2 tbsp cumin seeds
2 tsp fenugreek seeds
3 tbsp toor dal
3 tbsp channa dal
3 tsp urad dal
1tsp termeric powder
1 tsp asafoetida
2 tbsp whole peper corns
3 tbsp dry curry leaves
* Heat the skillet and dry roast all the ingredients one by one on a low flame expect termeric and asafoetida and set aside to cool. * Roast all the dals till they turn dark in shades. * once all the spices are cooled blend them along with termeric and asafoetida into fine powder. * store the prepared sambar powder in air tight container and use them when needed. Note - do not burn the spices,roast one ingredient at a time. Roast each ingredient at least for 2 min on low flame.
