4-6 Russet potatoes, thinly sliced (about 4 cups)
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
dash of cayenne pepper
1 1/2 cup grated sharp cheddar cheese, divided
