Homemade vanilla extract with brandy

Using this recipe allows you to choose a vanilla bean that you approve of. Pesticide free, or good conditions for farmers, etc. Plus it is so very easy to make and you know what's in it. Brandy is perfect with the vanilla, it enhances the vanilla flavor.

3 whole vanilla beans
1 cup of Brandy
Cut the vanilla beans lengthwise. Pour the brandy into a clean bottle that you can seal well. (I use an old soy sauce bottle that has been washed on high heat in the dishwasher. These bottles come with a plastic stopper and a nice pouring type cap. A corked bottle would work well too.) Add the cut vanilla. Seal the bottle and let it sit for about 1 month. The extract will not go bad because of the brandy, and there is no need to refrigerate.
