Honey Mustard Chicken

I love chicken and turkey. They’re delicious and a great sources of lean protein. But plain chicken all the time can get boring and heavy sauces can ruin the whole “lean protein” concept. So I’m always excited when I find a new way to healthily dress up chicken. This is one of my old favourites. It was inspired by this awesome Chicken & Apples recipe from Simply Recipes. 3-4 chicken breasts
1 heaping soup spoon old fashioned mustard
1 heaping soup spoon honey
1/2 apple juice box (I used juice boxes because we don’t drink much juice in our house and so there’s a lot less waste)
1/2 chicken stock cube
1 heaping soup spoon old fashioned mustard

1/2 chicken stock cube
Heat oven to 160C (325F)
Spoon honey and mustard into roasting pan. Mix with spoon.
Add chicken to pan and coat in honey mustard.
Pour 1/2 of the apple juice box into pan. Break up stock cube and add that.
Half way through, flip chicken. Add more juice if necessary.
Bake until thickest bit reaches 165F (73C)
Leave to rest under foil for 10 minutes.
