Hot Bacon Dressing Potato Salad ~ So Easy and super tasty! This is perfect all summer long. Serve warm for a great Autumn side dish.

2-3 lbs baby red potatoes
1/2 package of bacon and the drippings
4 hard boiled eggs cooled, peeled and chopped
1/2 cup apple cider vinegar
1/4 red onion diced small and 1/4 red onion sliced
1 tbsp sugar
2 tbsp cornstarch and 3 tbsp water to make slurry
salt and pepper to taste
1/2 tsp red pepper flakes
1/8 cup chopped fresh parsley
