Hot & Sour Red Cabbage with Bacon & Apple

This is a great side dish that goes well with pork, but especially the rouladen I also have posted on this site. Even if you're not a cabbage lover, the combination of all of the different flavors, sweet, sour, savory, are sure to please. It's really a no-brainer recipe with great rewards in the flavor department. It's also great cold the next day!

4 strips bacon
2 tbsp. sugar
1/4 cup chopped onion
1 small head red cabbage, shredded
1 tart apple, diced
1 tbsp. vinegar
1-2 pinches of cayenne pepper, or more if you like heat

In a large skillet, fry bacon until crisp. Remove and drain on paper towels, then crumble. Set aside. Add sugar to fat in skillet. Cook and stir over medium heat 2 minutes. Add onion and saute about 5 minutes, until translucent. Add cabbage, apple, vinegar, salt and cayenne. Stir until everything is combined. Taste to see if you have that sweet/tart flavor. Adjust the vinegar and sugar accordingly, until you get that perfect sweet/tart taste. Simmer for one hour with cover fully on skillet on low heat, stirring once or twice.
