Hummingbird Cake by Hey Little Sweet Thing

Everyone needs a good cake in their life and for me, this is PERFECT. It combines 5 of my favourite things – cream cheese frosting, pineapple, walnuts and bananas and cake. It’s delicious, fruit and nutty, moist (I bloody hate that word!) and did I mention that it’s delicious? I promise you… you and your tum need this!

for the cake
- 250g unsalted butter, at room temp
- 350g caster sugar
- 3 eggs
- 2 tsp vanilla extract
- 375g standard flour
- 3/4 tsp baking soda
- 1.5 tsp cinnamon
- 3 over ripe bananas
- 1x medium sized tin (439g is our standard size here in NZ) of crushed pineapple, drained
- 280g walnuts, slightly crushed
- 280g shredded coconut

for the icing
- 125g unsalted butter, at room temp
- 175g cream cheese, at room temp
- 525g icing (confectioners) sugar
- 2 tsp vanilla extract
- fresh fruit for decorating
