Kale Pesto with Pumpkin Seeds makes even more uses for kale

2 large cloves garlic
1/2 c. grated Parmesan cheese - or vegan grated Parmesan cheese for those following a vegan diet
3 c. chopped fresh kale
2/3 c. olive oil (you may not need this much)
2 tsp. fresh lemon juice
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. roasted pumpkin seeds
